MOROCCAN TAGINE

Discover the art of cooking traditional Moroccan food in a tagine. The tagine, an earthenware pot with a conical lid, is at the heart of classic Moroccan cooking. Chef Traci will guide you with hands-on instruction to cook Chicken Tagine. Everyone gets to make their own jar of Ras El Hanout (Moroccan spice blend) to take home. Includes chef-prepared appetizers and dessert.

BELIZE SALBUTES

Belize cuisine which is a fascinating mixture of Caribbean, Mayan & Garifuna cuisines. Chef Traci will guide you with hand-on instruction to make Salbutes, a vibrant orange pan-fried tortilla topped with stewed chicken and pickled onion. Includes chef-prepared appetizers and dessert.

MEXICAN COMAL

Discover the art of cooking traditional Mexican food with a comal. A comal is a flat griddle used to cook tortillas as well as toast spices and roast vegetables. Chef Traci will guide you with hands-on instructions to make Chicken Adobo Tacos with homemade corn tortillas. Includes chef-prepared appetizers and dessert.

MEATBALL MANIA

If you think meatballs are just a beef garnish on top of a mountain of spaghetti, think again. Chef Traci will guide you with hands-on instruction to meatballs from Greece and Thailand. Everyone will get to make one of Chef Traci's signature spice blends to take home. Includes chef-prepared appetizers and dessert.

I SCREAM. YOU SCREAM. WE ALL SCREAM FOR ICE CREAM!

Chef Traci will teach you how to make gourmet ice cream. Choices may include dark chocolate, fresh strawberry, peanut butter or rich coffee. You’ll also make gourmet waffle bowls and fudge sauce. Then, enjoy eating yummy ice cream sundaes.

Festive Small Plates

Small plate dining is creative and colorful, with a wow factor of flavor in each diminutive bite. In this class, we’ll make several tapas-style small plate dishes into a delightful meal, and you’ll experience what everyone loves about small plate dining: it’s festive, sociable, and a fun way to eat and enjoy a variety of tastes.

In keeping with the theme of adventure, I have a rotating list of internationally-inspired class favorites, and always include a savory kebab or skewer, something grilled, a potato or rice dish, and something inspired by the farmer’s market.
